Desperate

Around lunch time yesterday, Ryan came home to surprise me. At first I was surprised, then confused, then slightly heartbroken, and then happy again. He walked in holding a Buffalo Wild Wings bag. I had sent him out to run some errands, and thought maybe he had stopped for lunch. He held up the bag and said "I got you some wings!" First, surprised. REALLY!? WINGS!! Then confused. "Wait, I'm not allowed to have wings. And even if I was, you'd never let me." Then heartbroken when he said "just kidding. I just got you some sauce." And then back to happy when I realized that even though he didn't really get me wings, he did get me something delicious. He got me my favorite flavor of sauce, Asian Zing. It's sweet and deceptively spicy. He got himself a bottle of Parmesan Garlic. In a culinary world of no flavor or fun, he figured being able to put a tiny bit on chicken would spice up my life a bit. 

I decided to experiment for dinner. I wanted to "fry" up some chicken so that we'd have something to put our sauces on. But how can I fry anything without being able to use flour? I went out on a whim and put some almonds in the food processor, hoping they'd come out to a flour consistency. For the most part they did. So I wrapped some chicken strips in bacon (surprisingly I am allowed bacon), dunked in eggs, and then rolled in the almonds (which I heavily seasoned with herbs, in an attempt to hide the fact that it was almond dust. Ryan wasn't excited about the almond part) Then I sauteed them in some olive oil (no carbs!!) I was kind of nervous as to how they would turn out. They were super crispy and smelled of bacon, so you really can't go wrong. And when dipped in Asian Zing sauce, you'd think you were being naughty. I even got Ryan to eat several. He said he actually liked them. I'm not sure this will be something I do very often, but it was a nice change of pace. And my sauce was super yummy, and much spicier than I remember. 

Oh, and in other news, I've lost 30 pounds. I'm trying not to weigh more than once a week, so the next update will be on Monday. I can definitely see changes in my tummy and arms. And Ryan was very kind as to inform me that he can see changes in my "flanks." Ha! 


I literally only had half of one chicken finger, and I was full. Ugh! I miss pigging out!

Had I had a more professional food processor, I'm sure the almonds would have been finer. But my little, dinky one did its best.
