Picnic

The nice weather was totally calling to me today. Fate stepped in and helped out a little. At around 1:00, Ryan texted me and told me that the power went out at his company. I crossed my fingers that it would stay out and that he'd get to leave early. It worked! He came home super early today and spent the afternoon with me. I was laying on the bed with Ryan when a thought popped into my head. He asked for popcorn chicken for dinner, so I thought maybe I'd get up and make dinner, then we could go on a picnic. I've really been wanting to have a picnic lately. So that's what we did! We were driving around randomly the other day and noticed that there are a lot of parks by our house. We picked one right across the way from a municipal airport, and enjoyed eating our popcorn chicken while we watched the tiny planes take off. The weather was SO amazing! It was 81 degrees, but it felt cool, a little bit of cloud coverage, and a slight breeze. Perfect! We parked ourselves under a big tree, in a nice patch of shade. I made the mistake of laying on my back, so when my sciatic freaked out and I couldn't get up, Ryan and I sat there and laughed hysterically while he made fun of me for being like a turtle on its back. We definitely need to make picnics a habit.


My first time making Jan's popcorn chicken. I thought they were delicious, especially with honey mustard.

He was in Heaven! Popcorn chicken, cookies, and a beautiful day.

  2. It's really easy!

    I had my grocery store butcher cube some chicken breasts into 1" cubes.

    1 egg
    1 cup milk
    2 cups flour
    salt & pepper

    Heat a pan full of oil at about medium heat. Make an egg wash out of the egg and milk. Mix the dry ingredients. (I thought salt and pepper was too bland for my liking, so I put some garlic powder in. You can play with the dry ingredient mixture if you want.) Dip the chicken into the egg wash, then coat with the flour mixture. Fry for 5-8 minutes until they are golden brown. I like to serve mine with Honey Mustard. SO good!!
